English: occupational name for a plowman, from Anglo-Norman French caruier, from Late Latin carrucarius, a derivative of carruca ‘cart’, ‘plow’. Americanized spelling of German Garber, Gerber, or Körber (see Koerber). Irish: variant of Carvey. Possibly also a reduced form of Irish McCarver.
