From the Middle English and Old French female personal name Hersent Hersant (from Continental Germanic Herisint consisting of the elements *hari- ‘army’ + *swinth- ‘strong powerful’).

In addition the family name was brought to the UK in the 16th century by Protestant refugees fleeing religious persecution in France and the Low Countries.
